Note: Downgrading Chrome will automatically delete your browsing data if you don't turn on Chrome Sync. Therefore, if it's not necessary, it's not advised to roll back Chrome version. If you really need to do it, you can turn on Chrome Sync or download Google data to make a backup first.
How to Downgrade Chrome Version in Windows 10
Google doesn't support a direct Chrome version downgrade. But you can get a previous version of Chrome. You need to uninstall the current version, and reinstall the preferred older version of Chrome.
How to Download Older Version of Chrome for Windows

To uninstall Google Chrome, you can press Windows + I, click Apps -> Apps & features. Scroll down in the right window to find Google Chrome app, click it and click Uninstall button.
Tip: To check your current Chrome version, you can click the three-dot Chrome menu icon, click Help -> About Google Chrome to find out.
Step 2. Then, you can find some reliable resources to find and download older versions of Google Chrome, e.g. https://filehippo.com/, https://www.slimjet.com/chrome/google-chrome-old-version.php, etc.
Find your preferred version of Chrome and download Google Chrome for Windows 10 32 bit or 64 bit.
How to Stop Google Chrome from Automatically Updating
You can use Registry Editor to prevent your Windows computer from automatically updating Google Chrome. Follow the steps below.
Tip: Before you edit the registry, it's advised you make a backup of current Windows registry in case something goes wrong. Learn how to backup and restore registry.
Step 1. Press Windows + R keyboard shortcut to open Run dialog. Type regedit in Run dialog, and press Enter to open Registry Editor on Windows 10.
Step 2. In Registry Editor, click as following path: HKEY_LOCAL_MACHINE\SOFTWARE\Policies\Google\Update\AutoUpdateCheckPeriodMinutes.
Then double-click AutoUpdateCheckPeriodMinutes and set its value to 0 to disable automatic Chrome updates.
Tip: If you don't find Google or Update folder in the left panel, you need to create Google and Update folders. You can right-click Policies and click New -> Key to create a new key named Google, and right-click Google to create a new key named Update, then right-click Update to click New -> DWORD (32 bit) Value to create a new value named AutoUpdateCheckPeriodMinutes.

Google update may be in one or both of the two locations on your computer: %ProgramFiles(x86)%\Google\Update or %LOCALAPPDATA%\Google\Update.
